Pancakes

Me and my son bake almost every weekend.  This week he wanted to eat
pancakes.  After trying out different recepies, this one works just
fine.  It is simple and quick without the need for buttermilk or sour
cream like other recepies need.  So here are the ingredients:

  • 1 1/4 Cups of flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 4 extra large eggs
  • 2 tablespoons oil

Start by mixing all the dry ingredients first, then add the wet ingredients.  Mix until smooth.

Place your non-stick griddle (do not overheat at the non-stick coating
breaks down if over heated) on the large side of your oven (I am using
an electric oven) with the temperature dial set at 5.  Pour some oil
into the griddle to evenly coat it.  Then with a large spoon pour about
two spoonfulls into the griddle.  Cook until the top starts to bubble,
and then turn.  Cook until it carmalizes, then you can take it off the
griddle.

Before you pour the batter onto the griddle you can always add blueberries, or anything else to the batter.
